Savory Watermelon Feta Salad
This surprising savory salad is the perfect combination for those 100 degree days. It's a bit sweet, crunchy, with a little touch of heat from the chili. The watermelon adds a welcome amount of sweetness, it is mixed with tomatoes a bit of onion, thinly sliced radishes, fresh mint adds clarity and then there are crumbles of creamy feta. Plus if you have leftovers do what I did and blitz it in the blender for a delicious gazpacho the next day.

Melon, Peach, Mascarpone & Prosciutto Salad with Honey Vinaigrette
This cool refreshing salad is summer in a bowl. It is full of flavors and textures. Use it as a first course or it can make a nice light lunch on its own, accompanied by a good loaf of crusty bread and a glass of sparkling or fruity wine like a Viogner, Chenin Blanc or Riesling.
